The huchen, also called Danube salmon, is Europe's largest freshwater salmonid, living in rivers of the Danube basin. Its pink, salmon-like flesh is a rarity traded at high prices. Due to its scarcity, trade is limited to farmed fish. Hucho hucho. Also known as Danube Salmon, Huchon (poisson), Huchen, Donau Zalm.
